In Greece, it used to contain tomatoes, onions and meat with yogurt, cucumber and cheese, but Egyptian cuisine changed the moussaka and removed some of these ingredients and added other ingredients, the most important of which is eggplant

A kilo of turkey aubergine

a quarter kilo of minced meat

steps to prepare eggplant recipe or Egyptian moussaka
Wash the eggplant well and cut it into round slices of medium thickness.
Put the eggplant slices in a dish, sprinkle them with salt and leave them for a quarter of an hour
Hit the tomatoes in a blender
Dry the eggplant well and put it in another bowl
Cut the pepper into slices
prepare a pan and put oil in it on high heat and fry the eggplant slices in it
After frying the eggplant, drain it well from the oil in a dish.
Fry pepper slices and potatoes in the same pan.
In a small tray, put two tablespoons of ghee on high heat and add a quarter cup of meat and small pieces of onion.
Add half a spoon of black pepper and a quarter spoon of salt. Stir the meat well, add a quarter cup of water and let it cook until it is fully cooked
To make the sauce, put three tablespoons of oil in a pot, then add the onion slices and let them wither a little, then add a large spoon of minced garlic.
Add the tomatoes beaten in the blender to the oil, onion and garlic and stir well. When it starts to boil, add half a spoon of salt, half a spoon of black pepper and a quarter spoon of thyme. Stir the sauce well and let it cook until it is fully cooked
Prepare a casserole and put the layers of Moussaka in order
Put two sauce spoons at the base of the casserole and spread the sauce well, then put fried eggplant slices on top of the sauce.
Add two tablespoons of sauce again over the eggplant and spread it well.
Add the minced meat over the pepper and also distribute it well in the tray.
Add the fried potatoes over the minced meat and spread it over the whole tray.
Add the sauce over the potatoes and then add another layer of eggplant
Add the last layer, which is the same sauce. Spread it well on the whole tray.
Put the eggplant tray in the oven until its face becomes redder and then remove it from the oven
