“I’m going on a diet,” Bryan announced, much to the chagrin of the rest of the family. His doctor recommended a strict diet that seems to consist mostly of meat and eggs. Bryan loves it. The rest of us? Not so much. The kids don’t enjoy the dishes and I don’t like cooking two separate meals. I knew there had to be a balance to find dishes between his diet plan and something everyone could eat. I found it with this Crab Deviled Eggs recipe. I adapted the recipe to suit our tastes and added an option to make them gluten free and dairy free so the entire family could enjoy them. These eggs are tasty enough to satisfy the kids and with the use of low-fat mayonnaise, a delicious diet treat. They would be perfect for picnics and potlucks too!

Making deviled eggs isn’t complicated. I’ve included some tips to make the perfect deviled eggs.

Start with a pan of cold water. Add the eggs and make sure they are covered with water. Bring them to a boil.
*Boil the eggs for approximately 11 to 13 minutes. You’ll need less time with smaller eggs (11 minutes) and more time with larger eggs (13 minutes.)

*Remove the eggs from the pan as soon as they are finished boiling. Place them in a bowl of ice water to stop the cooking process.
*Allow the eggs to cool to room temperature and peel immediately. Eggs that are too cold or have been stored in the refrigerator are harder to peel.

Crab Deviled Eggs Recipe

Ingredients

  • 12 hard-cooked eggs, cut in half lengthwise
  • 1 cup imitation crabmeat, flaked (Be sure to check labels to make sure the brand does not use wheat as one of the ingredients if you are gluten free.) Regular crab meat can also be used instead.
  • 1/4 cup mayonnaise (or veganaise if you prefer)
  • 1 bunch of green onions, chopped
  • 3 large dill pickle spears, chopped
  • Salt and Pepper to taste
  • 4 tablespoons prepared mustard

Instructions

  1. Slice eggs in half lengthwise. Remove the yolks and place in a small bowl. Set the whites aside. Mash the egg yolks with a fork. Mix together crab, mayonnaise, onions, pickles, mustard, salt, and pepper. Add the crab mixture to the egg mixture and stir until blended. Using a spoon, stuff the crab mixture into the egg whites. Refrigerate until serving.

Be sure to check the brands of imitation crabmeat as some of them use wheat as ingredients. Regular crab meat can be substituted for the imitation crab meat.

    I haven’t made or eaten deviled eggs in so long, and then my mother-in-law brought some to the 4th of July BBQ we were having. Totally reminded me how much I love them. Can’t wait to try this recipe.

    I love using imitation crab meat in recipes. Truthfully, unless I am eating real crabs I prefer it over lump crab meat.
